The Extremaduran dehesa is a sustainable ecosystem unique in Europe. Ibéricos Montesano, faithful to tradition and supported by advanced technology, maintains a quality cycle from the farms to the genetic selection of its pigs. The animals live free, feeding on fresh natural products and completing their life in montanera, where they consume between 12 and 15 kilos of acorns a day. They reach an ideal weight of 180 kilos, obtaining healthy meat rich in fatty acids and antioxidants.
In the middle of winter, the production of hams and shoulders begins, which can last up to five years. These black-sealed products meet the strict requirements of the Dehesa de Extremadura Designation of Origin. In this process, the hams are prepared with a V-shape, salted without preservatives and passed through controlled drying rooms for three months before being transferred to natural drying rooms. The artisanal technique of opening and closing windows allows for perfect drying, complemented by two years in natural cellars.
