The Dehesa de Extremadura Protected Designation of Origin (PDO) guarantees that our products reflect the Extremadurans' commitment to quality and authenticity, capturing the true essence of this region.
The Dehesa de Extremadura PDO certifies exclusively 100% Iberian pigs, both acorn-fed and Cebo de Campo.
The 100% Iberian acorn-fed ham with DOP Dehesa de Extremadura, internationally recognised with the Diamond Award from the prestigious International Taste Institute in Brussels, is the jewel in the crown of Ibéricos Montesano.
A PERFECT ENVIRONMENT FOR GRASS
The Dehesa Extremeña is a fenced-in area that provides a perfect environment for pigs to graze, as it is home to holm oaks and cork oaks, trees that produce the precious acorns, essential in the diet of the Iberian pig. This enclosed environment not only ensures a natural and healthy diet for the pigs, but also contributes to the distinctive flavour and superior quality of our products.
The perfect location
Ibéricos Montesano chose to establish itself in Extremadura due to its unrivalled conditions for raising Iberian pigs. This region represents 45% of the national surface area of pastureland and is responsible for 60% of the production of acorn-fed Iberian pigs. The geographical location and climatic conditions of Extremadura provide the perfect environment for our pigs, ensuring that they receive a diet rich in acorns and live in a natural and healthy environment.
The ideal environment
We have a 850-hectare farm where pigs can grow and develop in a natural environment. Our farm in Jerez de los Caballeros offers the necessary space for optimal pig breeding; so that they can feed freely and enjoy a healthy life, which translates into an unrivalled product.
Artisanal production
Our process for producing Iberian products follows the traditional method, starting with slaughter in the coldest months to carry out salting and post-salting at low temperatures. The rest of the process follows the natural cycle of the seasons, allowing the arrival of spring and summer to gradually temper the temperatures and perfect the flavour of the final product.
