With a life of complete freedom and special care, the pigs spend 18 to 24 months in the montaneras, consuming 12 to 15 kilos of acorns daily to reach 180 kilos. After this process, in which they acquire their characteristic flavour, the production begins, which in some cases lasts five years.
Ibéricos Montesano hams and shoulders are cured under the Dehesa de Extremadura Protected Designation of Origin. Prepared in a V-shape and naturally salted, they then spend three months in controlled drying rooms, where temperature and humidity are managed with advanced technology. They are then moved to natural drying rooms for 36 months, where opening and closing windows allows the mountain air to enhance their unique flavour.
Finally, two years are added in the cellar, where the environment and the absence of light give the final character, not only in taste and smell, but also in health benefits.
