Evaluated in a blind tasting by a jury of 250 chefs and sommeliers and top-level institutions, such as the Michelin Guide or Ferran Centelles, from the El Bulli Foundation, consolidating this ham at the top of the best acorn-fed Iberian hams in the world.

The jury highlighted its high juiciness, beautiful fatty infiltrations, delicate aromas of acorns and flowers, softness, tenderness and sweetness in the mouth, melting texture thanks to the exquisite balance between lean and fat.

Product details

The Extremaduran dehesa is a sustainable ecosystem unique in Europe. One million hectares, where holm oaks, meadows and cork oaks are the dominant flora, and in terms of fauna, the Iberian pig is king. There, in Jerez de los Caballeros, Ibéricos Montesano is the reference company in the production of hams, loins and sausages from 100% Iberian pork, raised on acorns and under the prestigious Dehesa de Extremadura Protected Designation of Origin.

Ibéricos Montesano maintains a quality circle that begins on its farms, where a 100% Iberian genetic background ensures perfect animals. With a life of complete freedom and special care, the pigs spend 18 to 24 months in the montaneras, consuming 12 to 15 kilos of acorns daily to reach 180 kilos. After this process, in which they acquire their characteristic flavour, the production begins, which in some cases lasts five years.

Ibéricos Montesano hams and shoulders are cured under the Dehesa de Extremadura Protected Designation of Origin. Prepared in a V-shape and naturally salted, they then spend three months in controlled drying rooms, where temperature and humidity are managed with advanced technology. They are then moved to natural drying rooms for 36 months, where opening and closing windows allows the mountain air to enhance their unique flavour.

Finally, two years are added in the cellar, where the environment and the absence of light give the final character, not only in taste and smell, but also in health benefits. These products stand out for their high content of oleic acids that help control cholesterol and provide vitamin E, a powerful antioxidant.

These are the 100% Iberian pork hams and shoulders from Ibéricos Montesano, raised on acorns and under the Dehesa de Extremadura Protected Designation of Origin. At the end, the master ham maker's tastings will decide whether they are ready to be sold in pieces or sent to be deboned or cut with a knife. The artisans from Ibéricos Montesano also prepare loins, chorizos, salchichones and tenderloins from 100% Iberian pork, raised on acorns for Ibéricos Montesano.
