The 50% Iberian acorn-fed shoulder from Ibéricos Montesano comes from animals raised in freedom, in the Extremadura pastures, a sustainable ecosystem unique in Europe. More than a million hectares of meadows and forests. Holm oaks, cork oaks, oaks, and other plant species populate the landscape. Morning mists cool the fields of this region, establishing a microclimate conducive to the development of fresh and aromatic herbs, coexisting with the master of these pastures, the Iberian pig.
Located in Jerez de los Caballeros, Badajoz, Ibéricos Montesano is committed to excellence from breeding to the production of Iberian products. With a genetic background of Iberian pigs, the animals are carefully cared for in a natural habitat of sun, air and wide open spaces. Their diet includes herbs, aromatic plants and large quantities of acorns during the montanera, reaching optimal development in 18 to 24 months, which provides an exceptional nutritional profile, rich in fatty acids and antioxidants.
After the montanera, the salting and post-salting process begins, followed by curing in natural drying rooms, where the technique of opening and closing windows allows the characteristic flavour and aroma of the Iberian shoulder to be obtained. Finally, the last phase takes place in natural cellars, where the lack of light and the tastings of the master ham makers determine when the product is ready to be sold in pieces or sliced.
