The 100% Iberian acorn-fed shoulder from Ibéricos Montesano comes from animals raised in freedom, in the Extremadura pastures, a sustainable ecosystem unique in Europe. More than a million hectares of meadows and forests. Holm oaks, cork oaks, oaks, and other plant species populate the landscape. Morning mists cool the fields of this region, establishing a microclimate conducive to the development of fresh and aromatic herbs, coexisting with the master of these pastures, the Iberian pig.
Located in Jerez de los Caballeros, Badajoz, Ibéricos Montesano is dedicated to excellence in the production of 100% Iberian products. Since their birth on Ibéricos Montesano farms, the Retinto and Entrepelado Iberian pigs live in freedom and are fed with herbs, aromatic plants and large quantities of acorns, which, together with their life in montanera, where they eat between 12 and 15 kilos of acorns a day, gives them unrivalled organoleptic qualities. The meat of these animals is rich in fatty acids, vitamins and antioxidants.
After the montanera, the curing process continues with salting and post-salting, followed by a long period in natural drying rooms, where the mountain air contributes to the unique flavour and aroma of the hams and shoulders. The artisanal work of opening and closing windows is an ancient technique that allows the product to mature slowly. This meat not only delights the palate, but is also a heart-healthy food, with high levels of fatty acids and vitamin E.
Finally, the last phase is in the natural cellars, where the climatic conditions and the tastings of the master ham maker will decide whether they are ready to be sold in pieces, boned or ready to be sliced.
