The 100% Iberian acorn-fed ham from Ibéricos Montesano has been awarded the Diamond Award 2024 by the International Taste Institute in Brussels, achieving the highest score for seven consecutive years, a sign of the prestige of this product. This recognition, awarded by renowned chefs and sommeliers, such as the Michelin Guide, consolidates Ibéricos Montesano as one of the best acorn-fed Iberian hams, being described as a "ham of superior quality, exceptional texture and spectacular taste".
The Extremaduran dehesa, a unique ecosystem in Europe, provides an ideal habitat for the 100% Iberian pigs of Ibéricos Montesano. With one million hectares of holm and cork oaks, the pigs live in freedom, feeding on acorns and fresh herbs. These animals, of 100% Iberian genetics, spend 18 to 24 months in montaneras, consuming 12 to 15 kilos of acorns daily until they reach their ideal weight.
In winter, the production of the hams begins, a process that can last up to five years. Prepared using the V-shape, the hams are salted and spend three months in controlled drying rooms before being moved to natural drying rooms for 36 months, where opening and closing windows to the mountain air gives them their unique flavour. Finally, they spend two years in cellars that give them their distinctive character and nutritional benefits.
These are the 100% Iberian pork hams and shoulders from Montesano, raised on acorns and under the Dehesa de Extremadura Protected Designation of Origin. At the end, the master ham maker's tastings will decide whether they are ready to be sold in pieces or whether they are sent to be deboned or cut with a knife.
