Ibéricos Montesano remains faithful to tradition, relying on advanced technology to guarantee quality at all stages: from breeding farms to the genetic selection of Iberian pigs. The animals live in freedom and are fed exclusively on natural products, including acorns, during their last months of life, reaching a weight of 180 kilos.
In mid-winter, the preparation of these delicacies begins, a process that can last up to five years in the case of black-seal hams. These are prepared according to the criteria of master craftsmen: V-shaped, naturally salted and controlled drying for three months. Afterwards, they are placed in natural drying rooms for 36 months, where the climate is controlled by opening windows, and finally, they remain in the cellar for two years. This process allows us to obtain a heart-healthy product, rich in oleic acids and vitamin E.
