At Ibéricos Montesano we know a lot about the use of this noble animal beyond hams and shoulders. The artisan sausage makers at Ibéricos Montesano also carefully prepare 100% Iberian acorn-fed chorizos. The acorn-fed chorizo is made from the highest quality meats from our 100% Iberian pigs, a product that leaves no one indifferent due to its intense aroma and pleasant flavour, in which the paprika from La Vera stands out, which is used in the marinade for its preparation. It is then stuffed into 100% natural cular casings and taken to natural drying rooms where the artisan sausage makers will monitor the curing of the product for a minimum of 5 months, during which time the opening and closing of windows to the mountain air will give it the final aroma, colour and flavour.
The master craftsmen at Ibéricos Montesano, with the same care, also prepare loins, sausages and tenderloins from the most select lean meats of 100% Iberian pork raised on acorns in the Extremadura pastures.
