Montesano Extremadura Iberian products, both alone and in good company, a superfood for confinement
Share
Including Iberian ham in our diet is the best recipe for this confinement.
/wp:paragraph wp:paragraphA product as traditional as Iberian acorn-fed ham (and sausages) is considered a superfood , thanks to its high content of monounsaturated fatty acids (oleic acid), which reduces the level of cholesterol transmitted by LDL ('bad cholesterol'), but without reducing the levels of HDL ('good cholesterol'), hence why Iberian ham can be considered especially as a heart-healthy food.
/wp:paragraph wp:paragraphAnd the fact is that acorn-fed Iberian ham is a complete food to include in the diet due to its nutritional value, providing proteins, iron and B vitamins. Ham is an excellent source of nutrients, including essential amino acids, minerals and B vitamins. And it is a good source of excellent quality proteins, due to its digestibility and essential amino acid content. And all of this acts as a defence system for the body.”
/wp:paragraph wp:paragraphIberian acorn-fed ham , Iberian acorn-fed sausages and fresh Iberian acorn-fed pork, the gastronomic universe of Montesano Extremadura recreated in its rich Extremadura pastures, have become, in these difficult times, ideal products for maintaining health and defences. It can also help us with family entertainment with its many culinary possibilities suitable for everyone, beyond its direct tasting.
/wp:paragraph wp:paragraphLike Nacho Manzano's famous croquettes . A recipe accessible to everyone and in which everyone can collaborate. The great Asturian chef and his sister Esther, with a total of three Michelin stars, are the authors of what are considered some of the best ham croquettes in the world. Here we propose their exact recipe, for 50 pieces, which we will make with Montesano Extremadura Iberian ham:

/wp:heading wp:heading {"level":3}Ingredients:
/wp:heading wp:paragraph-250 g of Montesano Extremadura Iberian ham
/wp:paragraph wp:paragraph-3 liters of natural milk (if possible, with all its fat)
/wp:paragraph wp:paragraph-250 g of flour
/wp:paragraph wp:paragraph-190 ml of mild olive oil
/wp:paragraph wp:paragraph-60 g of butter
/wp:paragraph wp:paragraph-5 g of salt
/wp:paragraph wp:paragraph-Eggs
/wp:paragraph wp:paragraph-Fine breadcrumbs
/wp:paragraph wp:heading {"level":3}Elaboration:
/wp:heading wp:paragraphFry the ham, previously cut into small cubes, in the oil and butter.
/wp:paragraph wp:image {"align":"right","id":1112,"sizeSlug":"large"} /wp:image wp:paragraphWhen it turns golden, add the flour, stir well and cook for about 10 minutes.
/wp:paragraph wp:paragraphAdd the hot milk, previously boiled three times, and cook for 50 minutes, stirring frequently to prevent sticking.
/wp:paragraph wp:paragraphPlace the béchamel mixture on a tray, so that it is approximately four cm thick.
/wp:paragraph wp:paragraphStir every 10 minutes until it cools, then cover the skin with cling film (so that it sticks to the skin and does not form a crust) and put it to cool in the refrigerator.
/wp:paragraph wp:paragraphAssemble the croquettes into an oval shape and the desired size.
/wp:paragraph wp:paragraphCoat them first in egg and then in breadcrumbs, vigorously moving the dish containing the bread so that they are properly coated.
/wp:paragraph wp:paragraphThen fry them in plenty of oil at a temperature of 180ºC. Whenever possible, use a deep fryer and add small quantities of croquettes at a time until they acquire a golden colour.
/wp:paragraph wp:headingHaving fun with Montesano Extremadura Iberian ham in the kitchen with chef Jordi Parra
/wp:heading wp:paragraphIberian ham and cold cuts need very little to be a source of family enjoyment. Eaten alone, with breadsticks or regañás, or with bread and tomato (spread, not deposited) they are in themselves a complete and healthy meal.
/wp:paragraph wp:paragraphBut Iberian products from Montesano Extremadura can also become allies for more “creative” dishes. Jordi Parra, chef at Disfrutar Events (Barcelona), offers us some ideas that, in addition to solving lunches and dinners, will be a source of entertainment and collaboration for the whole family during this confinement.
/wp:paragraph wp:paragraph“Make a potato and onion omelette and, once it is on the plate, but still hot, cover it with thin slices of Iberian ham fat as if it were a veil.” “Prepare a bikini (mixed) with Iberian ham, brie cheese (or another creamy type) and chopped toasted hazelnuts.” “Add chopped Iberian chorizo and pickles to the Russian salad.” “Illustrate the Galician-style cauliflower (boiled, with a touch of virgin olive oil and paprika) with thin slices of Iberian bacon.” “Delight some simple macaroni with garlic and oil with fine shavings of Iberian ham and capers.”
/wp:paragraph wp:paragraphThese are some of the diversions that Jordi Parra proposes to gastronomically liven up confinement with Montesano Extremadura acorn-fed Iberian ham.
